The Best No-Bake, No-Guilt Energy Bites Recipe
At our recent Day of Wellness, Evolve’s Registered Dietitian, Melissa Goldsmith took us through her interactive nutrition workshop “Food for Thought” leaving us with lots to think about along with some really useful tips. How to properly read food labels, how to conquer the grocery store like a pro, and how to save money and make your own super healthy snacks for on the go.
You asked for it, and here it is.
No-Bake, No-Guilt Energy Balls
We serve these as a power snack on our Evolve hiking and adventure days as they are easy to eat on the go and they pack small. They’re chock full of good-for-you ingredients that will power you through an active day. Whip up a batch and freeze half of them so you’ll always have them on hand.
½ Cup Cashews
½ Cup Brazil Nuts
½ Cup Quick Oats
¼ Cup Chia Seeds
3 Medjool Dates
3 Tbsp. Natural Peanut Butter
2 Tbsp. Honey
1 Tsp. Pure Vanilla
½ Tsp. Salt
2 Tbsp. Dark Chocolate Chips
Add nuts, oats and chia seeds to a food processor and pulse just until a powder forms, about 30 seconds. Add dates, peanut butter, honey, vanilla and salt. Pulse again until a dough forms. If the dough is too dry add 1 tablespoon of water at a time. Pulse in chocolate chips until mixed in. Put the dough in the fridge to firm up for about 30 minutes. Form into balls and store extra in the freezer. Ready to eat. Enjoy!
